Catch up


Since I don't always have the time to sit down to blog I figure I will be doing these big catch up blogs more often. Here's what's been going on.

Recipes/Fitness:

For a fun food challenge as well as an attempt to lose weight I have embarked on a 10 Day Vegetarian Challenge( don't worry Texans, I won't give up meat forever, it's in my blood). It actually hasn't been that hard and I have found some really good, easy and cheap recipes that will now be added to the menu rotation. I am not sure if I have lost any weight( I am not weighing myself until the end), but the meals have been filling and healthy so I am not worse for the wear. Some of our favorite new recipes are: Savory Bean and Spinach Soup~ Not only is this one so YUMMMMY it is a crockpot meal so it is super easy & Snow Peas Stir-Fry~ Words can't describe how yummy this one was! I will try to post the recipes for you. We started the challenge on Sunday and will end on Tuesday.

Book Recommendations:
Andrew and I gave up TV for Lent and it has been one of the best decisions we have ever made. I encourage and challenge everyone to turn off the TV, hide the remote or unplug the boob tube for a month or so. We have been more productive with our time, having more quality/quantity time with our little
family, playing games and reading, plus my energy levels have increased and I sleep better at night. I have read 3 books in about a week and a half. I LOVE LOVE L-O-V-E reading.
What's So Amazing About Grace by Philip Yancey~ Love this book. I was hooked in the first paragraph. It is definitely worth you checking it out from the library. Other books I highly recommend that I have read previously are: Mere Discipleship, Rich Christians in an Age of Hunger, Irresistible Revolution, Les M
iserables.....hmm that's all I can think of right now.
Emaline also has a book recommendation. It is a book that her Noni gave her on her trip to Texas. She has read it several times. Like I said GENIUS! Her book recommendation is: Do Unto Otters: A Book about
Manners by Laurie Keller.

WHAT BOOKS CAN/DO YOU RECOMMEND?

Cute Things Emalines has been doing:

~ Rolling Over
~ Sucking her thumb and or hand
~ Squealing in delight at random things

~ Sucking on my hand/arm and making noises...kind of like she is playing a harmonica
~Wakes up from her naps/bedtime all smiles and grins
~Spending more playful time on her tummy
~ Holding her rattles and toys and trying to get them into her mouth
~ Sitting in her Bumbo

Well that is all I have time for right now. I will try to post more pictures/videos tomorrow.

Once I started doing Weight Watchers, I realized that a lot of the meals I was making were meatless and oh so yummy. 20 pounds later and I'm still loving no meat but do find myself making some yummy meaty recipes from time to time (how could I ever give up healthified tacos??). I have some great recipes scanned that I can send you. I also recommend all Weight Watchers recipes. They're so good and you can get some for free on their website.

Please do post those recipes! I would like to see the meals you have on your rotation. I have always pushed for a more formal rotation, but we end up with the same ol' same ol' rotation. It would allow me to make the healty good stuff. The last few diet plans I have tried have ended up adding more pounds. I don't know what exactly my metabolism is up to, but the tiredness and moving slow contribute to things being low burning. Now that I am done with the OSHA stuff, and it is March Madness, I will have a good shot at knocking off books. Can I do that and be on the eliptical?

I LOVE Do Unto Otters! I just heard the audio of "The Nothingest Girl in the World" read by Sarah Jessica Parker and loved it. There's my recommendation. :)

I LOVE Do Unto Otters! I read it with my class! I have billions of good book recommendations, if you are interested! Some of my favorites include: Pigeon books by Mo Willems (the kiddos love them too!), and another "treat others kindly" great book- "Have you filled a bucket today?".
